Pepper Crusted Salmon with Spinach and Chickpeas

Although there are some foods you should be cutting down on or trying to avoid, that doesn’t mean your food can’t be delicious! We chose salmon for its rich Omega-3’s and nutrients, not to mention how tasty it is!

Serves: 2

Ingredients:

For the Salmon

2 skinless salmon fillets

1 tsp black peppercorns

½ tsp paprika

1 lime – juice and zest

½ Tbsp olive oil

For the Chickpeas:

1 can chickpeas

1 ½ Tbsp olive oil

1 large garlic clove, chopped

75ml vegetable stock

70g baby spinach

 

Method:

  • Heat oven to 190C.
  • In a pestle and mortar (or in a mug with a rolling pin), crush the peppercorns roughly. Add the paprika, lime zest and a dash of sea salt.
  • In an oven dish, place the salmon fillets and brush with the olive oil, then sprinkle over the pepper mix. Bake in the oven for 12 – 15 mins, or until the salmon is cooked.
  • Drain and rinse the chickpeas.
  • Heat the oil in a pan, add garlic and gently cook for a few minutes, don’t turn it brown.
  • Add the stock and chickpeas and heat through.
  • Crush the chickpeas lightly and add the spinach. Stir continuously until the spinach has wilted. Then add the lime juice, salt, and pepper to taste. Heat through and serve with the salmon.
